EASY MEXICAN BOWL serves 2
1/4 of a block of tempeh
1 cup cooked brown lentils
1/2 package of your favorite taco seasoning
water as needed
Add ins:
mixed greens
shredded carrots
shredded red cabbage
chopped bell peppers
red onion
cheese sauce
salsa
Boil tempeh for 5 minutes let cool before handling.
Preheat a non stick skillet with 1/4 cup water and crumble the tempeh into the pan and let cook for a few minutes to develop a bit of color add more water as needed. Then add the lentils and the taco seasoning and a bit more water and let cook for a few minutes so all the flavors marry.
To a half your bowl add the greens on the other half add the tempeh mixture and some rice of your choice. Top the greens with the add ins and then drizzle cheese sauce mixed with salsa over the entire bowl.
CHEESE SAUCE RECIPE
1 Yukon gold potato chopped
1 carrot chopped
1 1/2 cups chopped cauliflower
1 tsp each, salt, onion powder, garlic powder
1 T lemon juice
3 to 4 T nutritional yeast
1/4 cup soy milk or any unsweetened plant milk
1 to 1 1/2 cups cooking water
Boil the potato, carrots and cauliflower till tender. Add everything into a blender and blend till smooth.
HOMEMADE VEGAN CHICK'N AND RICE SOUP serves 6
1/2 large onion chopped
3 carrots chopped
3-4 celery stalks chopped
1/2 tsp each dried thyme, oregano and poultry seasoning
4 cloves chopped garlic
5 cups veggie broth
1 can chick peas rinsed and drained
1/8 tsp crushed red peppers (optional)
3/4 cup white rice
1 T lemon juice
2 cups packed greens
salt and pepper to taste
Start by sauteing the onion, carrot, and celery in a bit of water in a large pot over medium heat for 5-6 minutes until veggies soften.
Add in the garlic and seasoning and cook for 30 seconds. Add the veggie broth and chick peas and bring up to a boil. Add the rice and turn down to a simmer for about 15 minutes or until rice is done. Turn off the heat and add the lemon juice and greens and mix well and let sit for 5 minutes to let the greens wilt.
