Healthy Rajma kebabs
These kebabs are a hearty, satisfying, delicious, combination of red kidney beans, oats and spices.
It's a rich protein and healthy snack and a great appetizer too.
Kebabs can be deep fried or shallow fried or baked in oven but here I shallow fried these kebabs.
These have a perfectly crispy outer layer and melt-in-mouth inner texture and are very easy to make, infact they have a very unique & exotic flavor and the best way to include protein in your diet.

Ingredients:
2 cups boiled rajma (kidney beans)
1 tsp ginger, grated
1 tsp garlic, grated
1 green chilli, finely chopped
1 small onion, finely chopped
1potato, boiled and mashed
1/2 cup quick oats, coarsely powdered
1/4 cup fresh coriander leaves, chopped
1 tsp salt
1/2 tsp red chilli powder
1/2 tsp cumin powder
1 tsp coriander powder
1 tsp chaat masala
1/2 tsp amchoor powder
2-3 tbsp olive oil

Instructions:
Wash and soak rajma for 5-6 hours or overnight.
Then place the rajma in a pressure cooker and add 2 cups of water.
Pressure cook the rajma till they have softened really well.
Once the pressure settles down on it's own, open the cooker.
Drain the rajma well and keep aside.
In a blender jar, add rajma and coarsely grind them and place them in a bowl.
And in an another blender jar, coarsely grind the oats also and keep them aside.
In a pan, add 1 tsp olive oil on medium heat.
Add green chilli, ginger and garlic and sauté for a minute.
Add onions and cook until onions are translucent in color.
Add boiled and mashed potatoes and mix well with onion mixture and switch off the flame and keep aside.
Now in a wide bowl, add rajma, onion mixture, salt, red chilli powder, cumin powder, coriander powder, chaat masala and amchoor powder.
Then add coriander leaves and oats powder and mix all the ingredients well till everything is nicely incorporated.
Divide the mixture into equal sized balls.
Roll gently between your palms and gently flatten and make all the tikkis.
Add 1-2 tbsp olive oil to the non stick pan or skillet on medium heat.
Once the oil is hot, add tikkis and cook till they are golden brown in color from both sides and turn crispy too.
Serve hot with coriander chutney.
