Crustless Eggplant Parmesan (308 calories, 4 wwpp)
Ingredients:
1 Eggplant, sliced into 1 1/2" thick slices
Oil of choice
Seasonings: Salt, Pepper, Italian, Garlic Powder, Onion Powder
1 Tbs per slice, Marinara Sauce
1 Tbs per slice, Parmesan Cheese
2 Tbs per slice, Mozzarella Cheese

Slice Eggplant. Oil each side of eggplant and season to taste. Cook in a single layer in a preheated air fryer at 400 degrees F for 6 minutes on each side. Add marinara sauce, and cheeses on top and cook another 2 minutes in 400 degree F Air Fryer. Repeat until all batches are cooked, serve hot.

Crispy Ranch Chicken Tenders (254 calories, 3 wwpp)
Ingredients:
1 1/2 lbs boneless, skinless chicken breast, sliced into strips
1/2 Cup Plain Nonfat Greek Yogurt
Splash of water (2-4 Tbs)
1 Cup Panko Breadcrumb
1 Tbs Ranch Seasoning
salt

Slice chicken breast into strips. Mix Greek Yogurt and water until smooth. Add seasoned chicken to yogurt marinade. Mix breadcrumb and ranch seasoning. Take each chicken strip and coat with breadcrumb mixture on all sides. Spray strips with cooing oil. Cook in 400 degree F air fryer for 8 minutes, flip strips and continue cooking 2 more minutes until golden brown on all sides.

Chili Lime Shrimp (80 calories, 2 wwpp)
Ingredients:
8oz Raw Red Argentinian Shrimp
2 tsp Chili Lime Seasoning
salt
squeeze of fresh lime juice

Thaw shrimp if frozen, and press out any excess water in paper towel. Season shrimp with Chili Lime seasoning, a pinch of salt, and a squeeze of fresh lime juice. Air Fry at 400 degrees F for 6 minutes. Shake basket half way through for even cooking on all sides.
