Hi everyone!
In today's video I'm sharing what meals I've been eating a lot of lately. I've been loving my High Energy Edamame Salad! I also love having soup all the time because it's winter and it's a soothing meal. My absolute favourite is my simple Tomato & Black Bean Soup. It's literally done so fast and I have a healthy meal on the table! I add brown rice to bulk it up so I stay full and satisfied. I'm really trying to find the balance between the raw high energy foods and the cozy comforting meals lately.

High Energy Edamame Salad
Ingredients:
3 cups Shredded Carrot
4-5 cups Cabbage, shredded or chopped small
1 can of diced Beets in water
1/2 cup Raw Pumpkin Seeds
1/2 cup Raw Sunflower Seeds
Optional: 1- 2 cups chopped Parsley or Cilantro
Method:
1. In a large bowl add all the ingredients and mix well.
2. Add desired amount of dressing and store the rest in the fridge. Dressing will last 3-5 days in the fridge.

Dressing: Maple Dijon
Ingredients:
2 Tbsp Tahini
1 1/2 tsp. Dijon Mustard
1-2 tsp. Pure Maple Syrup or Agave
Seasonings of choice: I usually use Garlic Powder, Onion Powder Paprika, Multi Herb seasoning, Black Pepper, and a sprinkle of Sea Salt.
Hot Water
Method:
1. Add all the ingredients to a mason jar and add dashes of hot water to it so you can mix everything up well. Taste it to see if you have to adjust the seasonings and see if you need to add any more water to thin the dressing out.
2. Store the dressing in the refrigerator for 4-5 days.
