Matcha Coconut Bliss Balls
Ingredients
• 1 ½ cups almond flour
• ½ cup shredded coconut (plus another 1/2 cup or so for rolling)
• 1 tbsp matcha powder
• 1/8 tsp salt (or more to taste)
• 15 pitted dates (about 1 cup packed)
• 1 tsp vanilla extract
• ½ cup cashew butter (see attached recipe for homemade, which works best!)
• 1 tbsp honey
• ½ tsp ground cinnamon

Cashew Butter Recipe:
• 2 cups raw soaked cashews, drained
• 1 ½ Tbsp melted coconut oil
• ½ tsp vanilla extract
• 1 Tbsp honey (I like Manuka)
• 1/8 tsp sea salt
In a food processor, add the cashews and blitz until they start breaking down. They’ll still be slightly chunky. Remove lid and add in rest of ingredients. Process again until a smoother consistency and it turns into a ball. Taste for any needed adjustments (like salt).
Instructions

1. First, start off by soaking your pitted dates in hot (just boiled) water and let sit for a few minutes to plump up.
2. In a food processor, add the almond flour, shredded coconut, matcha powder, salt, soaked and drained dates, vanilla, and cashew butter, honey and cinnamon. Process until well mixed. This might take a few rounds, while stopping and stirring/re-distributing the mixture and going again until it’s in one uniform mixed ball.
3. Line a sheet pan with parchment paper.
4. Scoop out some of the mixture and roll into 1-inch balls (I love using my melon-baller scooper for this). Toss the rolled ball into a bowl or container with shredded coconut and stir/mix around to coat the outside of the ball.
5. Place the balls in a single layer on a baking sheet or in a large container. Cover and refrigerate for at least 1 hour before serving.
6. Store the balls in an airtight container in the refrigerator for up to one week or in the freezer for up to three months.

Superfood Walnut Brownie Energy Bites
Ingredients
• 1 cup unsweetened natural almond butter
• ½ cup ground flaxseed
• ¼ cup almond flour
• ¼ cup coconut flour (or just double the almond flour)
• ¼ cup cacao (or cocoa) powder
• ¼ cup unsweetened coconut flakes
• ½ cup walnut pieces
• ¼ cup goji berries
• 2 Tbsp hemp seeds
• ½ tsp ground cinnamon
• ¼ tsp sea salt or Baja Gold mineral salt (more if needed)
• 1 tsp camu camu powder (optional)
• 1-2 Tbsp honey (I used Manuka)
• 2-3 Tbsp Allulose sweetener (or any liquid sweetener of choice)
Instructions
1. In a large bowl, combine the almond butter, flaxseed, almond flour (and coconut flour if using), cacao powder, coconut flakes, walnut pieces, goji berries, hemps seeds, cinnamon, salt, camu camu powder (if using), honey and allulose (or other liquid sweetener).
2. Stir well with a rubber/silicone spatula, then switch to hands, mixing everything together and shape the mixture into about 24 (1-inch) balls. Place them in a single layer on a baking sheet or in a large container. Cover and refrigerate for at least 1 hour before serving.
3. Store the balls in an airtight container in the refrigerator for up to one week or in the freezer for up to three months.

Flax Crackers

Ingredients
• ½ yellow onion, roughly chopped
• 4 garlic cloves, chopped
• 1 cup just boiled hot water
• 1 cup whole flax seeds
• ½ cup sunflower seeds
• ½ cup pepitas or pumpkin seeds
• 2 Tbsp hemp seeds
• 2 Tbsp sesame seeds
• 2 Tbsp nutritional yeast
• 1 tsp Italian seasoning (and any additional seasonings such as garlic powder, onion powder or any fresh or dried herbs of choice)
• 1/2 tsp sea salt
• A little fresh cracked black pepper
Instructions
1. Preheat the oven to 300F.
2. To a large bowl, add all of the seeds and seasonings.
3. Soak the seed mixture in hot water that's blended with onion and garlic (just boiled) for 10-15.
4. Line sheet pan with parchment paper sprayed in olive oil. Spread seed mixture evenly, and bake in oven for 60-90 min or until golden and crispy. Score the crackers halfway through.
