Today, I'm sharing with you 4 vegan, plant-based meals I can't stop eating! They are some of my favorite "go-to" meals lately, and if I'm being honest, crowd pleasers in my house. These meals are also free from oil and great for vegan weight loss if you are trying to stay within a calorie deficit. Plus, they take about 10 minutes or less to make - note the cheesecakes do have to freeze for a while. I hope you enjoy them!

One Pot Mexican Quinoa:
1 onion chopped, 3 garlic cloves chopped, 1 can of diced tomatoes, 1 cup peppers, 1 cup corn, 1 can black beans (rinsed), 1 cup quinoa, 1 tbsp cumin, 1 tbsp chili powder, 4 cups veggie broth, salt and pepper to taste.
Pressure cooker: Add everything to a pressure cooker and set on high for 10 minutes. Manually release and top with avocado if desired.
Stove top: saute veggies in a little veggie broth, add the rest of the ingredients, and bring to a boil. Reduce heat and simmer for 20 mins.
